Day um, I forget…wait, it must be 28 since I am measuring. Day 31:Tempted By Potatoes. →. April 17, 2011. So maybe beans and cabbage together are not the best meal. At least maybe not as much cabbage as I have had in the past few days. Ive been trying to up my veggie intake, and also trying to eat veggies that are a little more nutrient-laden than the carrot sticks that usually comprise at least one of my meals. So I found this recipe for roasted cabbage. Next time, less cabbage! All in all, an easy day.

Day 44: Must Eat More Veggies. May 2, 2011. Breakfast: left over dal and chicken. Snack: handful of mixed nuts. Lunch: Made by Kassandra. Sheppard’s pie from the cookbook with lentils on the side. Dinner: 2 eggs plus some whites scrambled with half a box of frozen asparagus and a package of Serrano ham. Frozen asparagus is pretty nasty. It looks like it should taste good, but does not. That Serrano ham on the other hand, is awesome. I only wish it wasn’t like 4 bucks a package! Day 43: Back From Vacation.
