Combine ingredients in a microwave-proof bowl. Microwave on high for 3 minutes. Add a little milk or almond milk. Sweet with maple syrup if desired. I sometimes also add 1-2 T. roasted shelled pepitas and 1/2 c chopped apple before cooking. Or add chopped fresh peach or handful of fresh blueberries after cooking.

From the Knorr Soup mix packet. 1 box (10 oz) frozen chopped spinach, cooked, cooled and squeezed dry. 1 container (16 oz ) sour cream or plain Greek yogurt. 1 pkg Knorr Vegetable soup mix. 1 can (8 oz) water chestnuts, drained and chopped. 1/2 c, chopped onion.
