The fun side of canning! Monday, September 12, 2011. Well, I just came back from Georgia and guess what! Before I share the recipe, I have a few ideas that may be useful in the process of making this peach jam. I have tested these out and it has proved to be very successful. So here's the basic recipe:. 5 1/2 lbs cling or free stone peaches (fuzz gently rubbed off). 1 1/2 lbs sugar. 3/4 cup fresh lemon juice. Makes 8-1/2 pt jars. Transfer peach and sugar mixture to non-reactive pot and add lemon juice.
