Stepping Out On Faith. I am… Natalie. I began this blog as a journal for me through my recovery from Anorexia Nervosa, of which I was diagnosed in 2008. Subsequently, it became a place I came to process each step of my journey through Le Cordon Bleu, London as I embarked on my patisserie diploma in 2011. We also discussed me being on the pill and she suggested the best time to get off it would be when everything is stable – weight, health, work etc and when there are no big stressors that may affect my hormones. She said there’s no harm staying on the pill right now and it’s good that my periods are coming regularly with it. You eat all your pastries and cakes that’s why you put on x kg right? What if I can never stop gaining weight?

Although I’m a pastry chef I have started my way in the kitchen cooking! One of the reasons to take the patisserie route was because I didn’t really experiment much with baking but always cooked well. Passover is all about no flour! You can actually fill it with anything you can come up with and if it is good enough please share your experience with us!

Well…i thought long and hard if to use this platform to publish a flat we have for rent but at the end i have decided it can actually help students which are planning to arrive to London in January to start Cordon Bleu and while at it may help us too so why not! This is a perfect location and really really nice place and a kitchen that can be great for a student who needs to practice! Chocolate workshop at home with special guests.
