Perfect Partner: Rice Pilaf, Sweet Potatoes, or Baked Potatoes. 4-5 bone-in pork chops. 3 T maple syrup. 3 T Dijon mustard. 2 t olive oil. 1 clove minced garlic. Preheat grill (or cast-iron skillet) to medium-high. In a small bowl, stir together syrup, mustard, olive oil, garlic, salt and pepper. Separate 1/4 c. of sauce to baste chops after cooked. With remaining sauce, baste the pork chops on both sides. 1 c sour cream.

Prep time: less than 5 min Cook time: 8 min. 1 can pinto beans, rinsed and drained. 1/4 c vegetable broth. 1/4 t black pepper. 1/2 t chili powder. 1 T fresh cilantro, chopped. Rinse and drain pinto beans. Chop cilantro. Heat a nonstick skillet sprayed with cooking spray, over medium heat. Saute garlic until soft. Add the beans, vegetable broth, and spices. Raise heat to med-high and cook covered for 3-4 min. Prep time: 5 min Cook time: 15 min. 1 T olive oil. 1 c vegetable broth.

Sunday, July 8, 2012. Sweet Pork Tacos with Cilantro Lime Slaw. Prep Time: 30 min Cook Time: 8 hrs. Perfect Partners: Black Beans, Spanish Rice, Fresh Salsa and Guacamole. 1 whole shredded red cabbage. 1 c Cilantro, chopped. 1 tsp minced Garlic. 1/4 tsp. Cayenne Pepper. 1/2 tsp. salt. 2 tbsp. Lime Juice. 1/2 tsp. Cumin. Combine all but cabbage in a mini food processor or chop and combine yourself. Mix desired amount of dressing with slaw mix no more than 30 minutes before serving. 2 tsp Chili Powder.

Perfect Partner: Basmati Rice. 4 T vegetable or olive oil, divided. 1-1/2 lbs. beef stew meat, cut into 1 inch cubes. 1 large onion, chopped. 1 small onion, cut into rings. 4 cloves minced garlic. 2 T chopped green chilies. 1 T lemon juice. 1 2-in. piece fresh ginger, peeled (or 1/2 t. ground ginger). 2 t ground cumin. 1 t dried thyme. 1 t ground coriander. 1-1/2 c. beef broth. Puree garlic, chilies, lemon juice, ginger and spices to a paste.

Preheat oven to 450. 4 medium russet potatoes, peeled. 1 T vegetable or olive oil. 3 T grated Parmesan cheese. 2 t dried parsley. 1/2 t garlic powder. 1/8 t cayenne pepper. Preheat oven to 450 F. Line a baking sheet with aluminum foil and spray with cooking spray. Slice potatoes in half for fourths and cut into 1/2 inch cubes. Place potatoes in a medium bowl and toss with oil. Arrange potatoes on prepared baking sheet. Maple Mustard Pork Chops.

Friday, June 26, 2015. Being 5 years old, Cooper was the perfect age to enjoy the magic of Christmas morning. He woke up bright-eyed and ready, and couldn't WAIT to go to Poppy's house. It wasn't terribly early, at least, but Hudson had to be woken up early. He takes after his mommy, and is not much of a morning person, even when he does get enough sleep. When he gets woken up early- forget it. So.the day was already off to a "great" start with a crabby toddler. What did you get, Coop? And a toy vacuum!

Friday, June 5, 2015. Fall Camping at Cane Creek - Oct. 2014. Summers here are too hot, and have too many bugs to enjoy camping. So we get to go camping in the spring and fall. There's a place called Cane Creek that's great to camp with kids that's not far from our house. Cooper and Nate slept the night there in a tent, while Hudson and I just went for the evening until bedtime. If it involves hitting a ball, Hudson is all about it. If it involves fire, Cooper is all about it. The sunset was beautiful.

Thursday, September 11, 2014. Parade, Swimming, and Fireworks. I forgot to mention a few things from my last post. There was a day of relaxation that week when Nate and Coop went fishing in the morning. I went shopping and to lunch with my Mom, and Camyll did my hair. When the ditch was running, Cooper and Calvin decided to see whether Cooper's new battery-operated remote control truck from Grammie would float or sink. Kids! I had to tease her as we got out of the car, that her choice of footwear (black flats) was not farm friendly. City dwellers! Cooper was good about helping Hudson through the child-size hay bale maze. Friday, June 26, 2015. Christmas at the Aquarium with Poppy. We went to Salter Path/ the Outer Banks for Christmas, to be with Nate's family. There's a great little aquarium not far from Nate's dad's house, and during our winter visits, it's a must-do. It just so happened that Santa Claus was there feeding the fish in the big tank that day. Petting the sting rays is Cooper's favorite part of the aquarium.
