Soup is the perfect easy dinner to keep me warm as the evening turns chilly. Using the carrots and sweet potatoes from the last of the Winter harvest makes for a perfect base for soup. During the month of February, I was sick for probably 20 of the 28 days! Carrot and Sweet Potato Soup. Prep Time: 10 minutes. Cook Time: 30-40 minutes.

If you don’t have a Vitamix, you can certainly use an immersion blender to puree the soup. Enjoy! Roasted Poblano Sweet Corn Soup. 10 ears of sweet corn husks removed. 3 large Poblano peppers. 1 medium onion halved and sliced. 4 tbs olive oil. 2 cloves of garlic coarsely chopped. 4 cups of vegetable stock. 2 cups of water. 1 tsp ground cumin.
