Photography By : Charlotte Hu. Grilled marinated neck of lamb with pisto and hummus. 4 lamb neck fillets. 1 clove garlic, finely chopped. Tbsp pimentón de la vera. 5 tbsp olive oil. A pinch of fresh oregano. Black pepper, to taste. 1 tsp bicarbonate of soda. Juice of a lemon. 2 cloves garlic, crushed. A pinch of ground cumin. A pinch of za'atar. Salt, to taste. For the vegetable pisto. 4 tbsp olive oil. 1 large onion, halved and chopped. 1 red pepper, seeded and diced. 2 garlic cloves, finely chopped.

Aleppo pepper flakes, ground. 15g extra-virgin olive oil. 2 splashes orange-blossom water. 200g boiled freekeh, cooled and seasoned. 5 splashes orange-blossom water. 30g extra-virgin olive oil. A large pinch of dried mint. A pinch of cumin. For the tartare garnishes. A dollop of hung yogurt with sumac. 4g green pistachios, toasted. 2g rose petals, dried. 1g aleppo pepper flakes. A sprig of mint.

Photography By : Katie Wilson. Olive oil and pistachio cake with yoghurt sorbet. 100g plain flour, sifted. 5 tsp baking powder. 10 eggs, lightly beaten. Zest of 2 lemons. Zest of 2 oranges. 1 tsp cinnamon, ground. 1 tsp cardamom, ground. Preheat the oven to 160C/325F/gas 3. Line a rectangular baking tin with greaseproof paper. Mix all of the dry ingredients together into a bowl, then add the eggs, olive oil and zest.Whisk together into a smooth, batter-like consistency. CookForSyria: The Recipe Book.

Yotam Ottolenghi and Sami Tamimi. Warm yoghurt and aubergine with fresh tomato shredded pitta crisps. 4 aubergines, skin peeled lengthways in alternate strips so that it looks like zebra stripes, then sliced widthways into 1 -2cm rounds (1.2kg). 1 thin pitta (100g), stale or fresh. 2 garlic cloves, finely sliced. 1 tsp aleppo chilli flakes (or tsp regular chilli flakes, as an alternative). 300g natural yoghurt (around 4 per cent fat). 2 tsp lemon juice. 2 tomatoes, roughly grated and skin discarded (100g).
