You’ll need (for two people): two duck breasts, green (puy) lentils, an onion, a carrot, some duck stock and duck fat, a little tarragon, pepper and white wine or rice vinegar. Season your duck breast with black pepper and grill, skin side down until the skin is crisp and golden. Flip over and cook for a...

A busy period at work has led to fewer posts than usual, but I have still been cooking. A few fine things from the summer. Above are ramiro red peppers, split, deseeded, drizzled with olive oil and slices of garlic and roasted until there are a few flecks of black and the peppers are collapsing. And then an amazing potato salad with fermented onions and black garlic.

Posted on Wednesday, 29 July 2015. Grilled Lamb Shoulder with Ancho Chile and Smoked Paprika. This is made in a similar way to the ancho and sesame sauce I blogged about a few months ago. In this case I omitted the cinnamon and sesame seeds, added more tomato and garlic, and a teaspoon of smoked paprika at the blending stage. Smoky, a little bit fiery and perfect for a summer barbecue. Posted on Wednesday, 29 July 2015. Blog comments powered by Disqus. Reblogged this from frankaboutfood.

But as I made the puff pastry myself and it rose beautifully, I’m going to claim this one as a pie. I use the rough puff recipe from the British Larder. A classic filling, with a delicious crust, pie or not. Posted on Thursday, 29 September 2016. Posted on Friday, 23 September 2016. A busy period at work has led to...
