Cut the potatoes in quarters. In a large bowl, combine oil, salt and pepper. Toss the potatoes until well-coated. Arrange potatoes in a baking sheet and roast in the oven for one hour or until golden brown and crisp. Remove the potatoes from the oven and sprinkle with parsley.
