Shortcut Cooking (The Book). Monday, November 7, 2011. This is one of my favorite fall desserts. It is quick and easy to prepare, freezes beautifully and is loved by almost everyone! 2/3 C pumpkin puree (canned or homemade). 1 1/2 tsp. baking powder. 1/2 tsp. salt. 8 oz cream cheese, softened. 4 Tbsp. butter or margarine. 1 lb powdered sugar. Preheat oven to 350 degrees. Grease and flour a 1/2 sheet cake pan or jelly roll pan. Cream eggs and sugar in bowl. Add pumpkin. Spread batter in prepared pan.

Vegan Buttercream Frosting- good for piping. 1/2 cup nonhydrogenated shortening. 1/2 cup nonhydrogenated margarine (earth balence). 3 1/2 cups powdered sugar (sifted if clumpy). 1 1/2 teaspoons vanilla. 1/4 cup soy milk. Beat the shortening and margarine until well combined and fluffy. Add the sugar and beat for about 3 more mins. Add the vanilla and soy milk and beat for 5-7 mins until fluffy. In a medium-size saucepan, combine all ingredients and bring to a slow simmer. Cook uncovered, stirring occasionally for about 20 minutes, or until thick. This soup is unbelievably delicious, Jackson had 3 bowls! 2 carrots, finely chopped. 2 celery stalks (or 1 large), finely chopped. 2 cups diced potatoes. 1 medium onion chopped. 1/2 cup all-purpose flour (this is just a thickener, I bet a gf substitute would definitely work! 4 cups of broth- I used vegetable, but the original recipe calls for chicken or turkey broth. 2 cups COOKED wild rice. 2 cups half-and-half cream. 15 tsp dried parsley. Sunday, May 6, 2012. 5 Minute No Bake Peanut Butter granola bars. 1 and 3/4 C rolled oats. 1 C crisp puffed brown rice cereal. 1/4 C pumpkin seeds. 1/4 C sunflower seeds. 1/4 C chia seeds. 1/4 C unsweetened coconut. 1/8 C finely ground flaxseed. 1/2 C brown rice syrup. 1/3 C creamy peanut butter. 1 tsp vanilla extract. 1) Add all the dry ingredients to a large bowl. Mix them together. 3) Pour wet ingredients into dry and mix! 4) Put the mixture into a shallow pan and flatten it down. Time to get Saucy!

Tuesday, December 4, 2012. These are seriously delicious! Justin and I ate the whole pound of mushrooms in about 5 minutes. I would eat these every week, they are so good. 1 lb fresh mushrooms. 15 tsp dried basil. 1/2 tsp dried oregano. 1/4-1/2 tsp seasoned salt. 1/4 tsp garlic powder. Heat butter over medium-high heat in a large skillet. Add mushrooms, cook until tender. Stir in seasonings and reduce heat. Cover and cook for 3-5 minutes to allow flavors to blend. Friday, January 18, 2013. Vegan Chocolate Cupcake Recipe. Chocolate extract, or more vanilla extract. Preheat oven to 350°F and line a muffin pan with paper or foil liners. Pour into liners, filling 3/4 of the way. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.
