It’s a good half hour drive to what was at one time an active provincial park called Pigeon River. Or High Falls, but just the same they are well worth visiting. Monday, September 8, 2008. 1 Place nose in large pot - hide, hair and all! 2 Boil for 2 hours. 3 Don't look in the pot during cooking. 4 Cool dish down until you can handle it, then skin the nose without fainting. 5 Discard the hide. Wash the nose in cold water. Place the nose in a pot of clean, cold water. Add salt and pepper to your taste, bay leaves, and onions. Boil until tender. 2 1/4 lbs moose (1 inch cubes). 1 large onion, chopped.

Add beer and 1 tsp. salt. In separate bowl, combine flour, cornmeal and remaining salt. Dip fillets into liquid batter then into dry mixture, and back into liquid batter. Fry in butter until light brown and fish flakes with a fork. BBQ Bacon-Wrapped Fish Skewers. 4-5 lbs walleye (or Northern Pike) fillets - cut into 1" cubes.
