Kati's Kitchen: Freezer Cooking Tips and Recipes: August 2009

http://katiskitchentips.blogspot.com/2009_08_01_archive.html

Thursday, August 27, 2009. Baby Food Green Beans. This post won't apply to 92% of you, but I thought I would put it up anyway because this is what I'll be freezing for a while. My mom gave us a bunch of green beans from her garden so I decided to start there. It brought back memories of snapping beans every summer while growing up. I also remembered how much I hate snapping beans. Of all the garden help I had to put in as a kid, beans were my least favorite. No wonder I don't have a garden. I freeze the ...

Kati's Kitchen: Freezer Cooking Tips and Recipes: Stuffing and Swiss Cheese Chicken

http://katiskitchentips.blogspot.com/2010/03/stuffing-and-swiss-cheese-chicken.html

Tuesday, March 16, 2010. Stuffing and Swiss Cheese Chicken. This recipe is so easy to assemble and just pop in the freezer. No pre-cooking required. I do recommend thawing this one completely in the fridge before cooking. Otherwise you may be cooking it for a very long time to ensure the chicken is cooked through. 1 lb uncooked chicken breast meat, cut into 1 inch pieces. 1 box stuffing (I use Stove Top). 4-6 slices of Swiss cheese. 1 can cream of chicken soup. March 16, 2010 at 8:39 PM. I am the mom of ...

Kati's Kitchen: Freezer Cooking Tips and Recipes: Taco Soup

http://katiskitchentips.blogspot.com/2010/03/taco-soup.html

Tuesday, March 16, 2010. Taco soup is a pretty common recipe. I imagine all taco soup recipes are pretty similar. It's a super simple recipe that freezes great and kids love it. This is the one dish that I can almost guarantee Claire will eat, which is saying a lot. She is a very picky two-year-old. 1 onion, diced. 2 cans kidney beans (drained and rinsed). 1 can (15 oz) diced tomatoes. 1 pkg taco seasoning. 1-2 cups frozen corn. 2 cans (8 oz ea) tomato sauce. Sarah's food blog: April 2011

http://sarahsfavoritefoods.blogspot.com/2011_04_01_archive.html

Wednesday, April 13, 2011. Whoopie pies vs. macaroons. Bon Appetit featured an article on the next cupcake: whoopies pies or French macaroons. I used their recipe for the French Macaroon with raspberry buttercream and a Family Fun recipe for the whoopie pie. My vote was for the whoopie pie, but I would like to make macaroons again to see if I can get them better. Mine spread thin instead of up. Whoopie Pies: (From family Fun Magazine). 189; cup unsweetened cocoa powder. 1 teaspoon baking soda.

Tuesday, July 20, 2010. Grilled Asian Chicken with Bok Choy. Jason and I made this the other week. It's straight from the Bon Appetit magazine. I followed everything almost exactly, except I used portabello mushrooms instead of shiitake. We even roasted the radishes. Who would have thought to roast radishes, but they were tasty. It's a keeper! We also made the leftovers as included in the recipe. Here's the recipe as copied from Bon Appetit:. To use in the Asian Chicken-Noodle Salad. Coat grill rack gene...

Monday, August 23, 2010. Blueberry and wild rice salad. My mom used to make a fantastic blueberry and wild rice salad that we would often have on picnics. Her picnics were fabulous, with several different salads, cheese and fruit, and a wonderful dessert. I don't think we still have her recipe for her salad but I found one online that was similar. I served it with some salmon and it made a delicious supper! 1 cup wild rice. 2 cups nonfat chicken broth. 1/4 cup chopped hazelnuts. 1/2 cup dried cranberries.
