シュクルート choucroute は、ドイツのキャベツの漬け物 ザワークラウト Sauerkraut のフランス語名です。 ドイツ語で 酸っぱいキャベツ と云う名のこの漬け物は、ドイツ国内だけでなく、隣接するフランスのアルザス地方の伝統食品でもあり、アルザスでは、このキャベツの漬け物と一緒にソーセージや肉を煮込んだ料理も、 シュークルート とよばれます。 発酵させないパン生地を薄く伸ばし、フロマージュブラン 酸味のある白い生チーズ 、 玉ねぎ、生ベーコンをトッピングし、高温のオーブンで焼きます。 Pâté au Sylvaner d’Alsace. ご存じの様に アルザスは何世紀にも渡りドイツとフランスで領土紛争が絶えなかった地方です 父方 母方双方の祖父母 そして私の両親もアルザス語 ドイツ語の方言のひとつ を話し この地方独特の文化 特に食文化を大切にして来ました. そんな中 私も自然にアルザス語とアルザスの文化の中に入って行きました 私の第一の IDENTITE フランス語でアイデンティティの意味 は アルザス人である事. 私の祖母 そして母は兄や私が10歳位の頃から料理を始め家事一切を教えてくれました 男女に関わらず 生きていく為に必要な術を身につける事 が出来てこそ一人前 という考え方です. でしたが 昼食を作るのは私の役目でした その時から料理の楽しさに目覚め 母を通じてアルザスの家庭料理を少しずつ教えてもらったのです. その後 商業大学院 グランゼコール に進学し IT業界で長く仕事をして来ましたが 料理は常に私の一部であり IDENTITE でした. という夢を温め続けて来ました 縁あって日本人と結婚し 京都という素晴らしい街に出会い 夢をこの街で実現する事が出来ました. フランス アルザス食堂 シェルーク CHEZ LUC.
