For this little gem! 1 cup unsalted butter (2 sticks or 1/2 pound), softened (but not melted! Ideal texture should be like ice cream. (You could probably use salted butter, but you'll want to consider omitting the salt, or adding less salt- gage it by taste). 3-4 cups confectioners (powdered) sugar, SIFTED.

We had it with rice- because that's what we had on hand.but serve it up with potatoes and it would work great, too! Thanks to Full Bellies, Happy Kids. 4 boneless, skinless chicken breast halves, about 1 1/2 lbs. total. 1/4 tsp. salt. 1/8 tsp. pepper. 1/3 cup bottled barbecue sauce. 4-8 slices cooked bacon, according to your taste preference (I chopped mine). 1 cup shredded cheddar cheese.
