Susan's Recipe Box. Pumpkin Pecan Chocolate Chip Cookies. Perfect anytime of year – my kids favorite! 2 sticks unsalted butter, softened (or equivalent butter-flavored shortening). 1 c light brown sugar. 1/2 large can of pumpkin puree. 1/2 tsp baking soda. 1 tsp baking powder. 1/2 tsp cinnamon (optional); 1/2 tsp ginger (optional). 1 1/2 c. chopped pecans. 1 pkg mini chocolate chips. Drop by rounded spoonful onto greased baking sheet. Bake at 350 degrees for 10-12 min. Pour 2 cups boiling water over 4 cups dried apples. Let stand at least 5 minutes. 189; c flour. 188; cup oatmeal. 189; tsp cinnamon. 188; c brown sugar. 189; c whole wheat flour. 2 tsp baking powder. 188; tsp salt. 189; c warm water.
