Niagara Cooks: Hooray! Ontario Greenhouse Produce is Back!
http://niagaracooks.blogspot.com/2012/03/hooray-ontario-greenhouse-produce-is.html
From farm to table. Friday, March 30, 2012. Ontario Greenhouse Produce is Back! 8220;The first shipment of tomatoes was shipped out today”, said Laura Brinkman, Marketing Coordinator for the Ontario Greenhouse Vegetable Growers (OGVG). I called the OGVG because I’ve been looking for Ontario produce in grocery stores and apart from cucumbers, haven’t been able to find any tomatoes or peppers. This cycle of replanting usually happens in our coldest months. You know the days between December to the end ...
Niagara Cooks: December 2011
http://niagaracooks.blogspot.com/2011_12_01_archive.html
From farm to table. Monday, December 26, 2011. Ok, it’s now the day after Christmas and I haven’t blogged for 2 days – but hey, I’ve been enjoying Paris! Off we went to the Opera House. We took a tour of the magnificent building and since there is no way to describe how fantastically incredible it is, I’ll just show you some pictures. Friday, December 23, 2011. Christmas in Paris, Day 2. There are a few schools in The USA but there is only one in Canada and that is Le Cordon Bleu in Ottawa. After tha...
Niagara Cooks: April 2012
http://niagaracooks.blogspot.com/2012_04_01_archive.html
From farm to table. Tuesday, April 10, 2012. I’m making doughnuts – not donuts! You may wonder what kind of stress can there possibly be when you eat for a living, but believe me, I can have a few pretty bad days. So here I am in the middle of the worst day ever! I’m refusing to answer the phone any longer for fear it may be another fire that I may or may not be able to put out. So what do you do on your bad days? The great thing about doughnuts is, the basic ones are never high maintenance. With a w...

http://niagaracooks.blogspot.com/2011_11_01_archive.html
From farm to table. Tuesday, November 22, 2011. Full of mystery and intrigue, mushrooms are an edible fungi. But there’s no mystery for Zlatko Vidmar, an international mushroom specialist. Throughout Zlatko’s career he has been in demand by the worlds top mushroom companies throughout Europe (Italy, Hungary and Germany), then in China and Viet Nam. Zlatko’s son, Denis runs the business while Zlatko works his magic in the mushroom dirt. “I eat mushrooms every day because it’s importa...Every year Phyllis ...
Niagara Cooks: When Recipes Become Yours
http://niagaracooks.blogspot.com/2012/04/when-recipes-become-yours.html
From farm to table. Saturday, April 7, 2012. When Recipes Become Yours. It’s going to be a lazy day and I feel like puttering I the kitchen. Before I head to the gym for my usual early morning workout, I pull together a small grocery list so I can swing by my favourite grocers on the way home. Cynthia Liedtke is Editorial Assistant for Health and Lifestyle Magazine ( www.healthandlifestyle.ca. The recipe calls for asparagus to be cooked separately but I’m not a fan of all that fuss so I cleaned the...

Thiessen Farms: Knotty Vampires!
http://thiessenfarms.blogspot.com/2012/03/knotty-vampires.html
Saturday, March 31, 2012. No more vampires on our farm! I got rid of them yesterday. Of course I'm talking about Vampire plum trees - what did you think? Vampires are a dark red, round plum. What makes them unique is their flesh - a blood red colour, instead of the usual yellow flesh of most red plums. Hence their name! Vampires are a fairly new variety of plum. When they first became available we planted only a few trees, to see what they would be like. Black knot is what did them in. Our Vampire trees ...
Thiessen Farms: Spring
http://thiessenfarms.blogspot.com/2012/03/spring.html
Sunday, March 18, 2012. How about this weather, eh! Spring has arrived, and in a most definite manner - lots of sunshine and very warm temperatures. Certainly a joy to work in, but a cause for some panic among farmers trying to stay ahead of the weather. The sound of orchard sprayers can be heard throughout our neighbourhood. Here is an example of peach leaf curl on some young peaches in June 2011. Eventually most of the leaves fell off and I thought the trees would die. Pruning continues as well. Tree a...

Thiessen Farms: The Ugly
http://thiessenfarms.blogspot.com/2012/03/ugly.html
Thursday, March 8, 2012. It's not the most beautiful time of year. There's no carpet of snow to cover the ground and make everything clean and white. The fresh, vibrant colours of spring are still some time away. But there is still some beauty - just a bit more subtle perhaps. And it's amazing how the camera can make things look good . And the overgrown pussy willow bush along the train tracks. Of course I want the pictures of our farm that we post on this blog to look good - really good! The post pile -...
Thiessen Farms: Spring Questions
http://thiessenfarms.blogspot.com/2012/04/spring-quiz.html
Wednesday, April 11, 2012. 1 What is the first fruit tree to blossom in spring? Apricots are the first fruit trees to blossom. This year they were in full bloom by the end of March - approx. 1 month ahead of the average. There was even snow on the ground during bloom! Because apricots bloom so early they often get hit by a frost which reduces the crop. 2 Identify the following blossoms. From top to bottom - apricots, peaches, peaches and plums. Sweet cherries are just beginning to open. Pears (above) and...

Thiessen Farms: CSA 2012
http://thiessenfarms.blogspot.com/p/our-csa.html
CSA (community supported agriculture) 2012. Here's how CSA works. In spring the consumer pays the farmer for a share of the upcoming harvest - a box of fresh, in season produce - that they will receive each week throughout the growing season. When the harvest is plentiful the share will be larger - in the event of a poor crop or even a crop failure, there would be less. Shares will be larger during the summer - at the height of the harvest - and smaller in spring and fall. Benefits for the consumer.
