Life can get a little hectic sometimes and with that you just have to know when to step away and get down to business for a while. In saying this with the summer fast approaching here in the great white north, I cannot wait to be back to blogging on a regular basis, bringing more food and more fun and more photos to share with anyone and everyone who may stumble across this tiny project I call my own.

Although I do enjoy making this crowd pleasing appetizer for all my family and friends! This particular version interested me in that you roast the mushrooms first in balsamic vinegar. It’s a bit time consuming to make but the effort is apparently worthwhile, so everyone tells me. I’m finding myself now looking purposefully for healthy crowd pleasing Crock Pot recipes to make! This one was perfect for a Outdoor BBQ dinner for 8, along with Grilled Flank Steak of course! 3-4 lbs boneless spare ribs. 1 onion, sliced. 3 cloves garlic, minced. 16 oz BBQ sauce. My family seems to cover all the different “diets” out there — vegetarian, paleo, really there is not many things they won’t at least try, once :) So I try to accommodate as best I can (just giving myself a compliment lol). This dish really does meet all the requirements (except vegetarian) and it is so easy to make, which I absolutely Love! 1 tbsp. coconut oil. 1 can coconut milk.
