いつもの料理を楽しくする便利な料理器具「出刃包丁」の世界
出刃包丁はその大きさによって 小出刃 中出刃 大出刃 と呼ばれる事もあり、基本的には10cm未満の刃渡りのものを小出刃、それよりも大きなものが中出刃 大出刃とされ、それぞれ刃渡りの長さの違いは無く、中出刃が刃がやや薄めのもの、大出刃は刃の厚いものの事です。 出刃包丁の正確な出自や普及した理由などは未だ解明されていませんが、江戸時代の書物(風俗学書)には、 その鍛冶、出歯の口もとなる故、人呼んで出歯庖丁と云えり という記述があり、この書物 堺鏡 が現在知り得る最古の初めて出刃包丁に関する記述が見られたものとなります。 上記の書物に書かれた文を要約すると、 出刃包丁を作った鍛冶師が出っ歯だったので、その包丁を出歯包丁と言った となり、出 歯 包丁が長じて出 刃 包丁という呼び名に変わって言ったと予想されています。 また、この 堺鏡 の 堺 とは、現在の大阪にある堺市の事で(時代によって少し場所が変わっていますが)、これによって出刃包丁が初めて作られたのは現在の大阪辺りだったのではないかと言われています。 魚は 腹 頭 胴 の順番で調理していくのが基本ですので、まずは腹を包丁で開いていきます。
