To me it's comfort food. Everyone seems to like it, it's really easy to make, and the layers make it look pretty too. I saw a recipe for brownies on the box. I made a few changes for lack of ingredients. These brownies are fudgy, cake-like, and delicious! 1 c margarine (I used 1/2c marg 1/2 c shortening). 2 1/2 c sugar. 4 eggs (I used 3 eggs 1 Tbl flax seed 3 Tbl water). 1 1/2 c CoCo Wheats. 1 1/2 c flour. 1 tsp baking powder.

Thursday, April 28, 2011. Roasted Asparagus and Red Onion Quesadillas. Luckily we have electricity, so we can have home cooked meals. So for a very simple dinner I whipped up these quesadillas. 65279; Roasted Asparagus and Red Onion Quesadillas. 1 lb asparagus, tough ends trimmed. 1 large red onion, cut into eighths. 8 oz pepper jack cheese, shredded. 3 tbs olive oil. 8 6-inch tortillas, I used whole wheat. These make a great simple dinner, but they also would make great appetizers. My Kind of Cooking.

It tasted like a fancy restaurant meal. 6- (4oz) boneless center cut pork chops. 2 cloves minced garlic. 1 Tbl olive oil. 2 cups sliced strawberries. 1/4 cup balsamic vinegar. Sprinkle pork with salt and pepper. Rub in garlic and rosemary. Heat oil to med-high. Cook pork chops a couple minutes on each side or until done.
