Monday, March 23, 2015. Deviled Eggs with Healthy, Heavenly Flavor. Eggs and Easter have been linked for centuries. I remember carefully balancing the hard boiled egg on the thin wire hoop and dipping it into the tea cup filled with dye. Do I leave it in for a dark color, or do I want a dainty and pale egg? Can I balance the egg and only dip in half so I can make a two-toned design? They practically disappear before your eyes. This version updates the classic recipe with a bit of hidden, heart-healthy, f...

Thursday, April 3, 2014. April Snow Showers Bring Tasty Waffles. It's supposed to be Spring in Minnesota. But this year, after what some are naming the "worst winter ever," we're having more snow and cold. The crocus have wisely kept below ground. The daffodils and tulips have nary a shoot. Mother Nature is about to whollop us with another 4 to 10 inches of snow overnight. Published by the Minnesota Historical Society Press. Cornmeal and Rice Waffles. 1/4 teaspoon baking soda. 1/4 cup salt, optional.

Saturday, April 14, 2012. I'm calling this the Best Meatloaf Ever! For several reasons, not the least of which is how tasty it is. And for its "Make Ahead Magic.". I hadn't intended to make meatloaf, but the weekend forecast for chilly and damp weather put the idea of warm and cozy dinners at the lake cottage in mind. I wandered about peering at the grocery meat cases. Nothing much inspired until I saw the grass-fed ground beef - On Special! Almost as "beefy" as a perfectly cooked sirloin steak. Posted b...

Sunday, July 10, 2011. Quick Low Salt Pickles. A man walked into the Market at Oakwood. . . I don't have heart trouble, but I am salt sensitive and try to avoid it. Sweet pickles are ok, But there is something about a sharp and tangy dill that sets off a sandwich or a dog. These quickly made cucumber slices come pretty darn close. I hope you enjoy them "ice man.". Serves 7 to 8). 1 large cucumber (or use 2 cucumbers and leave out onions). 1/2 teaspoon salt, optional! Posted by Rae Katherine Eighmey.

Tuesday, February 7, 2012. A Birthday Cake for Charles Dickens. February 7, 2012 is Charles Dickens 200th birthday. As I was looking for a period-appropriate cake to bake to celebrate, I stumbled on the menu for the dinner held in his honor by the New York City press on April 18, 1868. The New York City press invited Dickens to a celebratory dinner. As reported in an article in the March 1919 issue of The Bookman. By Pierre Blot who was a professor of gastronomy and founder of the New York Cooking Academy.

Wednesday, January 23, 2013. Free Soup for Cold and Colds. Cold temperatures and a family full of runny noses took me to the store in search of chicken soup. I wanted low sodium or salt-free broth. Horrors! Other shoppers had purchased all the broth except for one carton. I put that in my cart and pondered my possibilities. Was it worth a trip to any of the other grocery stores in my neighborhood? I had gone to the store that I knew had the largest supply of low salt products in the first place. But it i...

Friday, February 18, 2011. Has the American taste for salt increased over the years? From my point of view, after spending years looking at and working with 19th and early 20th century recipes, the answer is a resounding Yes! Then there are the recipes for ham. 3- to 5-pound ham. 2 carrots, peeled and sliced. 2 medium onions, peeled and quartered. 2 stalks celery, chopped. Small bunch fresh thyme or 1 teaspoon dried leaves. 1/2 bottle white wine. Posted by Rae Katherine Eighmey. Subscribe to: Posts (Atom).

Thursday, May 15, 2014. Abraham Lincoln Deserved a Father's Day Barbecue. Abraham Lincoln with youngest son, Tad. Abraham Lincoln's children "literally ran over him and he was powerless to withstand their importunities." That's what the family's Springfield neighbor Joseph Gillespie recalled. He summed it up this way. "He was the most indulgent parent I ever knew.". For all his indulgences, Lincoln did instill a strong sense of right and wrong in his sons. Published by Smithsonian Books. 1 cup warm water.

Wednesday, August 10, 2011. You can find another delicious recipe from the Little House on the Prairie era here in the blog. The date on the post is January 16, 2011 and here's a bitly (http:/ bit.ly/1AF9kho). It is easy to make and keeps well in the refrigerator for a couple of weeks. Great on ham or chicken sandwiches and it adds a fresh "bite" along side salmon or even lamb or pork. 3 large cucumbers, peeled, seeded, and grated. 1 small to medium onion, peeled and minced. 1 1/2 cups white vinegar.
