A little of this and that in and around Eagle, Idaho. Wednesday, March 27, 2013. Baked Sweet Potato Fries. 2 medium sweet potatoes (about 3/4-1 lb. total). 1/4 tsp rosemary salt. Pinch fresh ground black pepper. 2 tsp olive oil. Preheat oven to 450°F. Peel sweet potatoes and cut into 1/4-3/8" fries. Toss with cornstarch, mixing well to avoid any clumps.
