Friday, April 24, 2009. Family Vacation for Two. Right after leaving the airport, I went to the Centerville D.I. That was the jumping off point of my vacation. But I did get a wee bit of a cold before the day was over, so Sunday I stayed in bed with a red nose and a sore throat. By Monday I was improving. Who wants to be sick on their vacation? Sunday, April 26, 2009. Carrot Cake - Birthday Cake for Jim. Oven 350. Prepare two 9 inch round pans or one 9x13. 2 1/4 c cake flour. 1 1/2 c sugar. 2 tsp baking soda. 2 tsp ground cinnamon. 1/2 tsp ground ginger. In a medium bowl. In a large bowl combine . One (8 oz.) can crushed pineapple in juice, undrained. Add flour mixture, small amounts at a time, beating with hand whip or electric mixer. 2 c finely shredded carrots (4 medium). 3/4 c chopped pecans. . Cool Completely before frosting.

I think I felt worse, though, when he was sick (I hate to see animals suffer) than I do about him being gone (he's not sick now, thank goodness). And I feel bad for Fink now who has to be all alone without a buddy. Awww, poor taco! We loved that little guy! Is it bad that I had to put the "rubberband trick" on my pants today (as suggested by our pregnant receptionist)? They were Just. Too. Tight. I've GOT to stop eating out so much.
