The galettes are a great re-heatable lunch item and the soup is really more a risotto than a soup, but you could always add some more beef broth at the end to turn it back into a soup. As my baking failure rate is very high, I will continue to blog about successes until I bore you completely to death. 1/4 c warm water. 1 package dry yeast. 1 tsp good local honey. 1 3/4 c warm milk. 2 large eggs, room temperature. 1/2 c butter, melted and cooled. 3 tsp kosher salt. 6 1/2 c all-purpose flour. 1/2 c butter, softened. Cover bowl with dish towel and let rise for 1 hour.
