I'm calling it Mexican MoJo, because I did have a dish I already named this, but this one blows it out of the water! I do not get to exact with my recipes since I'm usually trying to get creative and use what we have without buying too many additional ingredients. Ps this makes a freaking ton.so it is plenty for a family of 4 maybe more. 1 box Rice a Roni spanish rice. 1 can corn drained.

Also, Ben who worked on the island told us about the island being in the equilibrium. Which means they never get hit by storms, we would sit on our balcony and watch the storms in Appalachicola but it would never rain on us. It was the most relaxing time I have had in a long time. She says we are going there every year! The world is at my fingertips.

Wednesday, October 28, 2009. My mama and I suddenly decided to take a vacation with just us. A colleague of hers told her about this place called St. George Island (right outside of Appalachicola). It was like stumbling upon a diamond in the rough. We slept until we wanted everyday, ate whenever we were hungry(on the beach), and read books under the sun all day. We shopped every other day in this tiny historic town! This place where we stayed was so quaint and cute, we absolutley loved it.
