Sunday, October 23, 2011. Why is it good this time of the year to have roasted pumpkin or squash ready to go in the fridge at a moment’s notice? Because it can be used in so many tasty ways. It can be added to a smoothie. It can be used to make a quick blended soup. It can be warmed up as a side dish and it can even be used to make dessert. For example, in the time it took to saute vegetables, I had this nice Confetti Quinoa. By using a combination of whole grain spelt and buckwheat flours in this recipe, you’ll be reducing the gluten. Saturday, August 4, 2012. I think I may have mentioned a few weeks ago that I had more zucchini than I knew what to do with. Well, after trying this recipe, this is where a good portion of this year’s crop has gone. These pancakes are so tasty, I’ve made them at least five times in the last few weeks. Needless to say, my arms have gotten a good workout from shredding so much zucchini! I should say my right arm. Don’t throw away the juice, though. It has a nice taste and is very refreshing. 189; t cumin.
