Sunday, March 25, 2012. I am always looking a new way to use tofu in a recipe. I ran across this breakfast casserole when looking for something to take to a church breakfast. 2 packages firm tofu. 3 ½ cups non-dairy milk. 4 tablespoons nutritional yeast flakes. 189; teaspoon tumeric. Black pepper (to taste). 189; cup vegan cheddar cheese. 189; cup vegan mozarella cheese. 6 slices of wheat bread. 1 tablespoon olive oil. 2 cloves of garlic, minced. 1 green bell pepper, seeded and diced. 1 onion, diced.

Wednesday, January 11, 2012. Pass the Peas Please. A few weeks ago I was sitting and talking with some ladies after a church dinner. We got on the subject of quick and easy recipes. One of the sisters gave this recipe that is great for using those left over blackeyed peas that we all had for good luck on New Year's Day. Black-eyed Peas and Spinach. 2 cups Blackeyed Peas (1-15 oz can). 1 can of Diced Tomatoes with Peppers. 5-6 hand fulls of fresh Spinach (can also use frozen). Ms Dash to taste.

Saturday, April 7, 2012. The Breakfast of Vegan Champions. I love to eat oatmeal! If you were to spend a week visiting me at my home, you would see me eating oatmeal at least 3 or 4 times a week. Lately I've been cooking my oatmeal in the microwave and adding in lots of great stuff. Here is what I find myself doing lately:. 1/2 cup rolled oats. 1 cup water, soy milk, almond milk, or some combination of these. 1/4 cup apple sauce. 1/2 medium banana, sliced. 1 tablespoon peanut butter or almond butter.

See the link in my cookbooks list on the left). 4 medium ripe avocados. 1 container of soy sour cream. 1 medium tomato, diced. 1 medium onion, finely chopped. Juice of one lemon. Juice of one lime. Thursday, January 27, 2011. Sheryl's Plate Licking Vegetarian Chili. 1-2 cans of beans drained and rinsed(I use one can of kidney beans and one can of black beans). Vegetarian Crumbles (TVP or Frozen meat crumbles; I like to use a sausage flavored version). Salsa (I use a thick and chunky variety when I don't have any homemade salsa on hand).
