Rich Chocolate Pecan Pie. 1 1/2 cups pecans. 1 cup semisweet chocolate chips. 1 unbaked 9-inch pie shell. 4 eggs, beaten. 1/2 cup light brown sugar. 1/2 cup corn syrup. 1/2 teaspoon vanilla extract. Confectioners' sugar, for garnish. 1 Preheat the oven to 375 degrees F. 2 Spread the pecan pieces and the chocolate chips evenly on the bottom of the pie shell. 3 In a mixing bowl, whisk the remaining ingredients together. Sunday, July 31, 2011. Last Saturday, the Ellis family was blessed with a baby girl - Olive Elizabeth West. David and I now have three nieces - Josie, Emma Cate, and Olive. And David's brother and his wife are expecting a baby in October, so it's a happy happy time in the Ellis family. Olive is the daughter of David's older sister, Jennifer, and her husband, David. Wednesday, January 11, 2012. Happy Birthday, Benjamin! Today my younger brother, Ben, is celebrating his 23rd birthday. Ben lives in Knoxville where he is a proud UT Vol. He will graduate in May with a degree in logistics. We're all very proud of him and can't wait to see what's next :). Monday, January 9, 2012. Meet Will and Casen. This weekend, my dear friends, Sarabeth and Justin, welcomed us into their beautiful home in Collierville, Tennessee. Sarabeth was such a gracious and thoughtful host and made the weekend special for all of us. Many of my college friends travelled from all over to catch up and spend time together. Tuesday, November 22, 2011. What a wild and crazy week it has been! First, my computer was sick, and then I got sick! I missed work on Monday and returned today. I was catching up on everything when water started gushing into our office building around noon. Thankfully, my office was spared, but unfortunately others were not. Oh the joys of an old building! A break for Thanksgiving is much-needed and will be much-appreciated. Hope you have a happy Thanksgiving with family and friends! A Weekend at Home.

To cater to my undeniable sweet tooth, I tried Naturally Ella's recipe for White Chocolate and Cranberry Cookies. They turned out great! This recipe makes LOTS of large cookies, so be sure to invite friends over to help you enjoy them. White Chocolate Cranberry Cookies. 12 tablespoon butter (room temperature preferred). 1 1/4 cup brown sugar. 1 teaspoon vanilla extract. 3/4 teaspoon baking powder. 2 1/4 cup flour.
