The recipe and Points Plus value reflect using chicken thighs, but I prefer white meat and always use breasts. I realize that this would impact the PointsPlus value, but to my advantage, since breasts are healthier than thighs. I will post the recipe with thighs, as listed in the cookbook. I love to cook a special meal on Sundays, and it's normally something Italian, saucy and cheesy. Friday, February 10, 2012. I'd venture to say it's my favorite Mexican casserole to date, so that says quite a bit. I especially like this one because it uses two key ingredients: refried beans, for a smooth texture, and frozen corn, for a sweet "crunch". Tuesday, January 29, 2013. French Onion soup has long been a favorite of mine. When my friend, Liz, raved about this recipe from Weight Watchers themselves, I knew I needed to try it. And lo and behold, it was amazing! I made it mid-day and simmered it for about 5 hours. It was so savory and delicious! We have lots of cold days still ahead of us this winter, so warm up with this great soup! 2 medium uncooked onion(s), thinly sliced. 4 tablespoons sherry (dry or sweet) or white wine. 4 slices French bread.
