It would seem I finally meet the minimum requirements for starting a blog chock-full of salty and sarcastic commentary on the universal qualities that make up the middle-aged dad experience. Therein lies one of my many dilemmas. Let’s weigh the options, shall we? A I skip the whole blog thing altogether. No one is going to hear it. B So I write this damn thing. Goes for a little while. Monday, March 8, 2010. Carrot and Walnut Cake. This is an unusual cake. It has not flour or baking powder. It consists mostly of ground nuts and carrots bound together with eggs and potato starch. The lemon and confectioners sugar glaze is a perfect topping. 2 cups walnut halves (about 7 ounces). 189; cup whole blanched almonds (about 1 ½ ounces). 1 ¼ cup plus 1 tablespoon granulated sugar. Zest of 1 lemon, coarsely chopped. 5 extra large eggs, separated. 1/3 cup potato starch. 188; teaspoon cinnamon.
