Thursday, February 25, 2010. North African Vegetable Stew. 1/2 cup dried chick-peas – cover with water and soak overnight. 3 thin coins of fresh ginger. 1 small cinnamon stick. 1 quart of water. Drain and rinse the chick-peas and put in medium saucepan with the ginger, bay leaf, cinnamon stick, and water. Bring to a boil, lower heat and cook, uncovered, at a gentle boil until tender, 50 to 60 minutes. Set aside and let peas cool in the broth with spices. 1 ½ teaspoons cinnamon. 190; teaspoon turmeric.

There are lots of recipes for ginger cake, from James Beard's American Cookery (1972) to Metropolitan Bakery Cookbook (2003) and they all have similar contents and methodology. I think my favorite is an adaptation of David Leibovitz's Fresh Ginger Cake. It's full of fresh ginger, spicy, moist and has a little crunch around the edges.
